All that changed the day that I found Dreamfields Pasta. There are only 5 grams of net carbs per serving of Dreamfields Pasta!! That is amazing. They rank a 13 on the GI scale while normal pasta weighs in at a whopping 38!!
Dreamfields has a patent on the pasta that they make, its that good! I was very impressed. It didn't taste like cardboard, it didn't taste "diet" and it held up very well in all of the dishes that I made! Thank you to Tim for sending me a box of Penne and a box of Rotini along with coupons good for $1 off one box! (of which I gave out more than half at my local grocery store). Tim also sent me some recipes that I was eager to make. Who wouldn't want to try Penne and Chicken in a Garlic Cream Sauce or Rotini with Ground Beef and Spinach? Well, I for one couldn't resist.

Let me tell you, its better than it looks (and that is hard). When I made the recipe, the only thing I did different was add more zucchini (because I love veggies) and I added a few extra garlic cloves (again, because I love garlic!) I didn't tell my husband that this was "healthy pasta" and when he came home asked why we, low carb dieters, were eating pasta. I told him it was a treat. He ate it and went back for seconds. He loved it. Later on, after dinner, I told him that it was a low carb pasta. He said he never would have known and I agree, no one would.
A few nights later, after the Chicken Penne leftovers were finished, I made the Rotini with Ground Beef and Spinach.
Who doesn't think that looks inviting? It was quick and nice enough to make for dinner parties. The recipe called for parmesan cheese and parm I did use. I sprinkled it over the dish and then popped it in the oven to melt the cheese. I also added a little more red pepper flakes (because I like it hot!).

Pasta Cannelloni
Serves 4
By Brad Schoenfeld
Ingredients:
8 oz. Dreamfields Elbows
1 clove garlic, minced
1/2 yellow onion, sliced
1/2 red bell pepper, diced
1/2 cup water
1 lb. Cannellini beans, rinsed and drained
1 tablespoon oregano
Directions:
1. Boil pasta until al dente (approximately 6 minutes) and drain.
2. While the pasta is cooking, spray a large nonstick skillet with non-stick cooking spray and sauté garlic over medium heat.
3. Add the water, onion, pepper, oregano, and cannelloni, and allow to simmer.
4. Cook until the vegetables are tender then pour over the pasta and enjoy!
Nutrition information per serving (1/4 of recipe): 298 calories; 12 g protein; 19 g digestible carbohydrates; 1 g fat.
