Recipe: Grilled Chicken Summer Salad with Orange Vinaigrette

Did you know that May is National Grilling Month! Well, let's celebrate! My husband, the magnificent chef that he is, is master of the grill! He makes BBQ chicken like nobody's business! When I think BBQ, I think ribs, chicken and steaks. These foods can be amazing but also very heavy. I absolutely love fruity, fresh summer salads. This recipe is by far the most succulent, fresh and summery salad you will ever eat! Serve it in a miniature size for guests as a first-course or delve into it as a dinner salad! I will warn you that this salad is addicting!

Ingredients for salad:
*Organic Mixed Greens (red bib lettuce, butter lettuce, radicchio, spinach)
*1/4 c. chopped walnuts
*2-3 T of blue cheese crumbles
*2 T of dried cherries
*1/4 organic apple, any variety, chopped
*1 sliced organic chicken breast, grilled

Ingredients for vinaigrette:
*2 oranges, zested
*2 small oranges, juiced or 1 large orange, juiced (or about 3/4 c. of Tropicana OJ)
*2 tablespoons balsamic vinegar
*2 tablespoons honey
*1 clove garlic, peeled
*3/4 teaspoon salt
*3/4 teaspoon freshly ground black pepper
*3/4 cup extra-virgin olive oil

In a blender, combine the orange zest, orange juice, balsamic vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, add the olive oil in a steady stream until combined. Transfer to a container and store in the refrigerator.

When I make this salad I always place the mixed greens on the plate first. I then sprinkle on all of the accoutrements. Fan your gorgeous grilled chicken over the salad and drizzle with salad dressing. This recipe makes enough dressing to fill a standard dressing bottle so you can enjoy it for weeks (or a month or so). How much dressing is up to you. I like a lot since this is the perfect combination of sweet, tangy and garlicy flavor. If you are not into raw garlic as much as I am, you can use 1/2 a clove when making the dressing.

TIP TIME: You can make the dressing ahead of time and marinate your chicken breasts in it for up to 24 hours. The flavor in the chicken is amazing when you give it time to soak up all the orange vinaigrette!
